Bison is naturally juicy and tender and can be interchanged with beef in almost any recipe. A lower temperature should be used as bison is very lean and will cook more quickly. It has nutritional advantages over other meats. Nutritionally you are getting more protein with fewer calories and less fat. It is less shrinking in your pan because of no marbling fat.
